Streusel Topped Blueberry Buttermilk Muffins

Hi everybody! Are you looking for another great recipe from Little Chloe Cooks? You are? Well that just dandy! This time we are making blueberry muffins with tasty streusel on top. Ok lets see how it goes... 


Streusel Topped Blueberry Buttermilk Muffins
Makes 12 muffins

Preheat your oven to 400 F


Ingredients for streusel topping starting with yellow bowl clockwise: Flour, sugar, water, butter and center is cinnamon.



Add flour, sugar, water and butter.



Lastly add the cinnamon.


Cut all ingredients together until crumbly.



Chloe says make sure it looks like this, then set aside.


Ingredients for muffins starting from blue bowl clockwise: Flour, oil, sugar, baking soda/baking powder/salt, blueberries and eggs. Bottle buttermilk and vanilla.



Place dry ingredients into a large bowl.


Sift or whisk all dry ingredients together and make a well in the middle. Well done Chloe!


In another bowl pour in eggs, buttermilk, 


vanilla and oil. Chloe is getting so good at pouring in the ingredients nice and slow.


Whisk together until well blended.


Pour liquid ingredients into the dry,


mixing quickly but don’t over mix.


Pour in blueberries and fold in gently.


Spoon batter into greased muffin cups.


Chloe is laughing at mommy because she decided to make a double batch but didn't think of how much it would make. Silly mommy. We had to make some mini muffins as well.


Sprinkle streusel topping on top of muffins making sure to eat any pieces that fall on to the counter. Nom nom nom.


Ta da! All ready for the oven. Bake for 20 -30 minutes (10 minutes for mini ones), till golden brown. 


All done! Nice and puffy! Aww cute lil mini ones (As stated above shorter time was used for the mini muffins).


Oh no mommy over filled the cups on the big ones!! They still look yummy though.


Ok time for the taste test....


Chloe gives them a big thumbs up!

Was nice not having to use the paper liners it made for no wasted muffin left on the paper and they look nice around the bottom as well.


Cut open view, nice a fluffy soft and just enough blueberries.

3/4 cup sugar
3/4 cup flour
1 tablespoon water
1 1/2 teaspoons cinnamon
1/4 cup butter, softened
Muffins:
2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup sugar
1/4 teaspoon salt
2 eggs, beaten
1 cup buttermilk
1 teaspoon vanilla
1/2 cup canola oil
1 cups blueberries

Directions:
Streusel Topping:
Cut all ingredients together until crumbly and set aside.
Muffins:
Sift dry ingredients together in a large bowl.
In another bowl, whisk eggs, buttermilk, vanilla and oil.
Make a well in dry ingredients and pour in liquid ingredients, mixing quickly but don’t over mix.
Fold in blueberries.
Spoon batter into greased muffin cups and sprinkle with streusel topping. Bake for 20 -30 minutes, till golden brown.
